Happy official first day of fall!!!!
Can you believe it is finally here?!?!
I am so excited. I know it’s probably still hot and un-fall-like for many of you, but let’s ignore that for a day and celebrate. I actually will be enjoying some actual chilly weather today, because I’m in Yosemite this weekend!
No, I’m not writing from a campground. I’m writing you from the past. I ate this yummy soup and wrote this post ahead of time so I could be sure that it went up on the official first day of fall! I had some strange urge to make it last weekend, and I’m really glad I did considering I did not feel like cooking this week. Now I have a fall recipe for the first day of fall!!!
I’ve been debating for about a month what my recipe post should be today. It’s one of my favorite days of the year, and I knew it had to be something stand-out. I narrowed it down to something pumpkin or a soup. So when I saw a南瓜汤recipe in the back of this month’s book club pickPower Foods for the Brain, the decision was easy.
As was the recipe. I have a few of Neal Barnard’s books, and all of his recipes are simple, healthful, and quick to make. This soup was no exception, especially if you use canned pumpkin.

I just made half the recipe. Feel free to double it.
from Power Foods for the Bran
1/2 onion, chopped
2 cloves garlic, chopped
2 C vegetable broth
2 C cooked pumpkin
little dash of nutmeg
salt and pepper to taste
Heat a few tablespoons of water in a medium saucepan over medium-high heat. Saute onions until translucent. Add garlic and cook a couple more minutes. Add broth and pumpkin and whisk until combined. Cook just until heated up, and add seasonings. Blend until smooth and creamy.
I topped mine with a swirl of creamy coconut milk and some cilantro. Delish!
